Some pictures of the pretty little danish town Helsingör, where we went on Monday.
It was a lovely, warm day and we just strolled along, looking at little shops, trying strong cheeses,
looking at all the liqouer stores and enjoying a beautiful day trip away.

Green smoothies are awesome, to be honest. They may not look like the tastiest thing you've ever seen, but trust me, they don't taste "green". Mix spinach with oat milk, banana, mango, pineapple or which ever fruit you like. I also like to add in mint leaves. It's absolutely fantastic for digestion and helps bringing all the goodness from spinach/kale into your system. Since it's been mixed your body will absorb it better and drinking it regulary has been proven to increase your overall health. So try it out! :) 
 
(Just be sure to mix them well, so it is well smooth, because little tiny bits of leaves between your teeth is not the best ;))

Two seriously delicious dinners I want to share with you

The last couple of days I have been trying new recipes (with my own modifications, one of them completely remade), and both of them I went "I need to cook this again, definately!".
 
First out was this asian salmon/bean salad which was just amazing! Let me see if I can remember how I did it...
 
Two servings:

  • 2 filets of salmon
  • a bunch of mushrooms
  • a tin of mixed beans
  • 2 cloves of garlic
  • some fresh grated ginger
  • sesame oil
  • neutral oil (coconut/sunflower/rapeseed)
  • soy
  • spinach leaves
  • sesame seeds
Chop the salmon into cubes, dice the mushrooms and stir fry them in a little bit of sesame oil, neutral oil and soy. Add in grated garlic and ginger, add more sesame oil/neutral oil and soy if needed. Add the beans, and let it all fry until cooked. Spinkle sesame seeds over it all and serve on a bed of spinach leaves. Absolutely fantastic! (I had some sambal oelek in it too, but if you don't like chili you can leave it out).
 
Second amazing dinner was this wrap:
 
  • 2 chicken breast
  • 2 tomatoes
  • ½ red pepper
  • ½ onion
  • 3 big teaspoons of tapenade
  • fresh rosemary
  • fresh oregano
  • spinach leaves
  • alfalfa sprouts
  • 2 wholemeal wraps
Dice the chicken into cubes, dice onion finely, same with pepper and tomatoes. Fry it all with generous amounts of tapenade. Add salt and pepper after taste. Cook until it's ready. Lay some spinach leaves and sprouts on the wraps. Top with the chicken stir (and a little sundried tomato if you wish), and serve! The only downside of this dish was that the bread went soggy...so maybe the bread is better served on the side. Up to you! Delicious either way :)

the weekend

On Friday I bought a box of strawberries, and this little peculiar shaped one was found. It looks like a little flower in disguise. Sweet!
On the Friday evening we packed a picnic and went to the busstop to go into town...
We sat down by the water and ate our food - home made wraps with smoked salmon, eggs, lettuce, sprouts and mayo + a muffin each.

Us
There was lots of people in town, and the reason was that Gyllene Tider was playing and they're very famous. They are from Halmstad and have been a band since the 70's...the lead singer is the same guy as in Roxette.
 
After a while we got cold though, and went home.
 
 
On the Saturday we went to the pier for fishing and sun bathing. Chris caught an eel (eek), and we both caught the sun a little too much (oops). Ate cherries, salad and had a lovely time. Summer and warm weather has finally arrived!
 
Sunday was a relaxing day, with a little walk. I went to the beach to meet Jessica and Johannes in the afternoon, while Chris stayed in and watched the tennis.
 
Today we've both been back to work, and tomorrow I'm off again. Planning to go the gym and then later meet up with Jessica in town. Will be a nice day :)

A few pictures from the last couple of days. 1) Yesterday's lunch: bread roll, avocado, egg, fruit, almonds. 2) Yesterday's face. 3) Two of yesterday's guests. 4) A strawberry muffin that I baked the other day (forgot it in the oven so it got hard on the outside *sad face* ).
