Green smoothies are awesome, to be honest. They may not look like the tastiest thing you've ever seen, but trust me, they don't taste "green". Mix spinach with oat milk, banana, mango, pineapple or which ever fruit you like. I also like to add in mint leaves. It's absolutely fantastic for digestion and helps bringing all the goodness from spinach/kale into your system. Since it's been mixed your body will absorb it better and drinking it regulary has been proven to increase your overall health. So try it out! :) 
 
(Just be sure to mix them well, so it is well smooth, because little tiny bits of leaves between your teeth is not the best ;))

My breakfast this morning consisted of a green, rejuvenating smoothie: oatmilk, 1 banana, ½ galia melon, mint leaves, spinach leaves, ginger and black currants. Yummy and great for the digestive system.

A smoothie bowl for breakfast is nice, fresh and filling. This one is made with ½ honeydew melon, ½ banana, and handful of grapes, a couple of mint leaves and a dash of plain yoghurt (can be excluded). Mix it together, pour in a bowl and top with something nice, like frozen and dried berries and enjoy! 
 
 

This last week

Two breakfasts from this week. Good filling ingredients like yoghurt/quark smoothie, boiled egg, and almonds is perfect before a long day at work!
 
It's been a very quiet week, in every way. Since Cloud has moved the flat is so quiet. It's really noticable that he added a lot of stress to our home and relationship, and even though he is incredibly missed it feels much better for us both. Hopefully Cloud will settle nicely into his new home, and have a lot less stress on him. Win win situation.

Breakfast

Last day off this long weekend. It's been lovely. Started this morning with a long and well earned sleep in, and then I went up and did small pancakes for breakfast. 
As you already know I loke playing around with different versions of pancakes and trying to make them healthier and more nutritious, so that it's possible to indulge guilt free. Sometimes I manage and sometimes not. This time I'll say that I did ;-)
 
For two people I used:
  • 1½ dl organic dinkelflour
  • 2,5 dl organic semi-skimmed milk
  • 2 organic eggs
  • 1 tsp roganic sugar
  • 2 tbsp coconut flour
  • 1 tbsp ground flaxseed
 
Just mix it all together and fry with some vegetable oil. I served with fresh fruit and frozen berries, and some quark.
 
Notice how much organic stuff I had in my pantry? I like the fact that I'm buying food with more thought for the environment and also my own health. Buying organic means less pesticides, additives and more nutritional value and flavour. Benefits all the way. 
 

Saturday lunch

Vegetarian, almost vegan, low GI pancakes for lunch. Sounds good? Well, it wasn't bad. Next time, I'll do the same but not without eggs! Anyway, these pancakes are full of healthy stuff and contains no fat, only the butter you fry them in!
 
So why do I say almost vegan? Because I fried them in butter. I could've chosen vegetable oil instead, but I think pancakes in butter are just too tasty! Instead of whipped cream I made a cashew cream full of good nutrients. Bananas and blueberries are a must!
 
Vegan pancakes for two:
  • 1,5 dl of whole wheat flour (I used dinkel)
  • 1 dl of coconut flour (can be exchanged for normal flour)
  • 2 dl of oats milk
  • 0,5 dl of water, add more if needed.
  • 0,5 tbsp of baking powder
  • 0,5 tbsp of sugar
I also added about 2 tbsp of ground flaxseed to make up for the egg, didn't really work though. Next time I'll make the pancakes with an egg for a more fluffy texture. They turned out nicely flavourwise, but they were quite dense and doughy. 
 
Cashew cream:
  • 1 dl of cashews
  • 0,5 dl of water
  • ½ frozen banana
  • 0,5 teaspoon of raw vanilla powder
Soak the cashews in water for about 15-30 minutes. Add the frozen banana and raw vanilla powder and mix it well with the rod mixer, or in the food processor. Voila! A creamy and tasty option to whipped cream. 
 
Veganska pannkakor stod på lunchmenyn idag. Nästa gång satsar jag dock på att ha i ett ägg i alla fall, för utan ägget blev pannkakorna ganska stabbiga. Jag tipsar dock varmt att utbyta grädde mot cashewkräm, som du enkelt gör genom att mixa blötlagda cashewnötter med frusen banan och lite vaniljpulver. Bananen kan såklart bytar ut mot vilken frukt/bär som helst. Använd fantasin! Mycket mer näring än grädde, och med nyttiga fetter istället för de skadliga fetterna i grädden.

Morning

Good morning! Off to work in a moment, but first I need to do some uni-work as I was lazy last night and couldn't be bothered. I need to work hard at doing everything on time at the moment though. If I get this job (will get an answer next week), I will be pretty busy for about 3 months. It will be worth it, because turning an opportunity like this down would be silly. Anyway! I'll be around later today, so see you then!
 

A week of breakfasts

Some breakfasts from this week. I've had a pomegranate at home and it has given a little extra touch to my breakfasts. Fruit, berries and nuts are the most important component for my breakfasts, but I feel like I'm a little stuck in the same routines again. I should try something new than porridge or yoghurt every day. I read so many health blogs with good tips on different breakfasts, but when it comes to morning, it's always easier to just stick to routines I guess ;-)
 
Mina frukostar innehåller alltid frukt, bär och nötter, men jag har fastnat lite i samma rutiner jämt. Inte så intressant. Jag skulle vilja prova något nytt, men det blir morgon är det ändå alltid lättare att bara köra på det man brukar. Haha :)
 

Is it only Tuesday?

Ate my breakfast (chocolate porridge with banana, blueberries, peanut butter and almonds) this morning looking out the window with this view. Was snowing quite hard, but it stopped around 10-11 and it hasn't snowed anymore. Really enjoying work experience since I constantly have someone to share thoughts and ideas about career counseling with. However, I haven't had a great day today. Was feeling quite sorry for myself for no reason at all and craved a bowl of ice-cream after dinner. It was looovely.
 
Tomorrow I'm working at my school, Thursday is back to work experience and Friday back to work. Phew! Looking forward to the weekend to be honest!

Living food

Sounds scary, eh? But basically living food is a term used in the Raw Food community to define food that is plant-based and has not been heated over 42 degrees celsius. Everything that has been heated over that temperature loses it's living enzymes and is therefore "dead". Today I tried a living food, vegan "yoghurt" based on avocado and banana. 
I was really wondering if I was gonna be brave enough to try something new for breakfast, haha. You how hard it can be to break habits. But I did, and it tasted wonderful, you can't taste the avocado at all.
 
Living food, vegan "yoghurt" 1 portion:

  • 1 banana
  • 1 avocado
  • handful of blueberries
Mix it all together in the food processor until smooth. The colour of it doesn't look great, you can remove the blueberries and it would have a more apetizing colour I think, but it really tasted nice. Topping it with some fresh orange and frozen berries just made it even better!

Still quite poorly.....

....but slowly getting better. I don't feel as frozen and achy today as I was yesterday. Today it's Chris' turn to feel terrible. We were going to have our second lot of vaccinations today, but had to reschedule it for next week. The nurse said we couldn't have them done while feeling like we are. 
 
Anyway, made a gooey mess for breakfast, but it was really filling!
Mixed oats with plain yoghurt, a little bit of cocoa, a tiny bit of instant coffee, agave nectar and then topped it with some more yoghurt, banana, blueberries, nuts and peanut butter. It was yummy :-) Especially as I mixed it all into an even more gooey mess after taking the photo, hehe!

Last day of the year

Woke up with sore muscles in both arms and legs, but not uncomfortably sore, just nicely sore. The kind of sore that makes you smile because you can feel that you gave the body a bit of a challenge the day before. Started off this last day of the year with a breakfast consisting of apple pie porridge and ½ a banana.
 
Apple pie porridge: Chop up a small apple into little chunks, put in an bowl together with 1 dl oats, 1 tbsp ground flaxseed, cinnamon and cardamom. Add 2 dl water and microwave for 2 minutes on full effect. I topped it with almonds, dried cranberries, sultanas, walnuts, frozen blueberries and lastly a little bit of milk. Yum!
 
The housework is done and now I've got to sort out some stuff on the dissertation, then I'm ready to celebrate the beginning of the new year!
 
Vaknade med en trevlig träningsvärk i både armar och ben! Åt äppelpajgröt (bland små bitar av ett litet äpple med 1 dl havregryn, linfrön, kanel och kardemumma med 2 dl vatten och mikra 2 min. Toppa med mandel, torkade tranbär, russin och mjölk. Gott!

Sunday

Last night when I went to bed I was sort planning the next day ahead (aka today), when I suddenly realized I had been booked in for work 10-16, haha. Good thing I remembered, eh? 
 
So got up this morning and started of the day with a good breakfast.
1 orange, and a bowl of plain organic yoghurt with oats, flaxseed, almonds, hazelnuts and blueberries.
 
After work I went to the gym and had a 35 minute workout, going through arms, shoulders, legs and stomach. So not a very heavy workout. And I must say I love my new workout gear! Yay! 
 
När jag gick och lade mig igår hade jag nästan glömt att jag skulle jobba idag. Tur att jag kom på det, så jag kunde sätta klockan! Åt denna smarriga frukost, jobbade, gymmade och handlade sedan lite mat. Jag älskar mina nya gymkläder! Yay!
