Gym and frittata

Had a really good workout at the gym today! Put more weights on my legs, and I definately felt stronger lifting in both chest press and shoulders. Yay! :-D
 
At the moment I'm lifting:
Legs (Squats): 17 kgs
Chest: 9 kgs
Back/Shoulders: 9 kgs (I would take more on the back unless it was a combined back and shoulder exercise...)
Triceps: 6,5 kgs 
Biceps: 6,5 kgs
Legs (Lunges): 11,5 kgs
Shoulders: Press ups, then 2 kgs in each hand.
Stomach: Sit ups

Came home and was starving. Made a frittata with tomatoes, onion, ham and potatoes, which we poured egg over and baked in oven until the eggs were cooked. Served with a side salad.Yummyyummy!

Thai curry with salmon and prawns

Recipe is taken straight from the book in the background: "Mina bästa GI-recept" Ulrika Davidsson.
 
Thai curry with salmon and prawns for four:
  • 2 carrots
  • 300 grams of salmon
  • 100 grams of prawns
  • 1 red onion or ½ leek
  • 2 tbsp grated ginger
  • 2 cloves of garlic
  • 1 can of coconut milk
  • 1 straw of lemongrass
  • 3-5 dl of fish stock (depending on if you will eat it as a soup or stew)
  • salt and pepper
  • A handful of sugarsnaps
Peel, clean and chop/grate the onion, carrots, lemongrass, ginger and garlic. Fry in rapeseed oil in a saucepan for a couple of minutes. Add the can of coconut milk and stock. Let it boil for about 15 minutes, and meanwhile dice the salmon and prepare prawns. Add the salmon and sugarsnaps and let boil for 5 minutes. Add prawns. Serve with rice.
 
Yumyumyum! Really nice, filling and nutritional dinner!

Been out today, studying at the library. Then went out to do some more Christmas decoration shopping. I have been feeling the Christmas tingle today. Getting excited about everything December has to bring! :-D

Vaccination drama and dinner

We went out for some Christmas inspiration today, but didn't find very much, I bought a few new decorations though :-) Also went to have the first lot of vaccinations done before the trip to Egypt in February (soo excited!!). I'm not scared of having injections and never have been, it didn't even hurt a slight little bit, but still I almost passed out. For some reason I became all dizzy, and light headed, sweaty and felt all the colour leave my face, so i had to lay down for a while, haha!
 
Anyway. Now we're home and have just eaten a lovely dinner of chicken, bulgursalad with mango and avocado, lettuce and home made green tomato chutney.
 
 
For the chicken: Take 2 chicken breasts, cover them in a layer of salt, pepper, cinnamon, cumin and paprika. Grill in the oven at 200 degrees C for about 25-35 minutes, depending on their size.
 
For the bulgursalad: Cook bulgur according to the packet, chop 1 mango and ½ avocado into little pieces. Mix with the bulgur when it's ready and add some pepper if you wish. 
 
Serve with some lettuce and some tasty chutney or maybe a lime sauce made out of sourcream and limejuice.

My amazing breakfast this morning! Chocolate porridge with banana, hazelnuts and coconut. So yummy!
 
Today I actually have some time to do things, so I'm going to do some proper housework! I want the place to look all nice for Friday, and to be honest, it has been a little neglected of late with me being so busy. Christmas decorations are going to be pulled out of the lock-up and examined, to see what more we would like to get for this year, and what we will and wont put up! :-)

Roast vegetable soup, oh yum!

Cooked the most delicious soup for dinner tonight! Had some root vegetables lying around in the fridge, and I thought it would be a good idea to use them up before groceryshopping tomorrow! :-)
 
Roast vegetable soup for about three:
  • ½ sweet potato
  • ½ small butternut squash
  • 1 parsnip
  • 1 carrot
  • ½ white onion
  • 3 cloves of garlic
Shop all vegetables and put them in an ovensafe tray. Pour 1 tbsp olive oil over it and toss around with salt, pepper, rosemary and parsley. Roast in oven at 225 degrees C for about 40 minutes. Take out of oven, boil about 6-7 dl water with one vegetable cube stock. Take pan off the heat, add vegetables and mix into a smooth soup with a rod mixer. Serve with bread/crackers and cheese. I really, really recommend this!
 
Världens godaste grönsakssoppa. Rosta rosmarin- och persiljekryddad sötpotatis, butternut pumpa, palsternacka, morot, lök och vitlök i ugnen (225 grader) i ca 40 minuter. Koka upp 6-7 dl grönsaksbuljong. Lägg ner grönsakerna i buljongen och mixa med en stavmixer tills soppan blir slät. Smaka av med salt och peppar.

Wow, what a start of the week!
 
Went up really early this morning to start work at 7 am. Worked for 4 hours, came home, had lunch then off out again. Needed to go to the library and get some more references for our theoretical chapter. Then went for 1 hour Body Pump and I was really pleased, cause I didn't feel like going, but I was feeling strong and fit and went through the workout pretty well! Now I'm home, soon to cook some dinner and do some more studying. Got to send the work to our tutor so he can give some feedback. Honestly, he has not been active in our work whatsoever, and I have zero trust in him, but hey, you got to do what you got to do....
 
Phew....So yeah. Here I am!

Analysis

Had a really nice time last night, and today I can't say I have done much more than studying. We are currently on the Analysis part of the dissertation, one of the hardest parts in my opinion. Anyway. One step further each day, I'm starting to see the light at the end of the tunnel now ;-)
 

Gingerbread yoghurt

Best breakfast in a while. Gingerbread yoghurt with pineapple, banana, strawberries, blueberries, almonds and sunflower seeds. Perfect start of the day! Now I'm going to study for a couple hours before heading out to town and then further on to celebrate a friend's birthday!
 
Gingerbread yoghurt: Mix plain yoghurt with cinnamon, cardamom, ground ginger and ground cloves. No sugar added and still tastes amazing! Christmas feelings :-)
 
Pepparkaksyoghurt med frukt och nötter - bästa! Blanda naturell yoghurt med kanel, kardemumma, malen ingefära och malen nejlika. Inget socker men ändå fantastiskt! Nu blir det plugg ett par timmar innan vi sticker ut!

Good day! Friday! Only a week until Chris' parents come over for a visit! Can't wait! But before that I have a weekend with some nice time with Chris, with friends and also some studying. Next week will be packed with intense studying, I want most of it finished by Friday next week. Phew! We can do this! :-)
 
Was feeling rather unhappy this morning, but I have turned my thoughts around and I'm trying to find strength in the fact that whatever will be will be. I can only do my best, and I will!
 
Today I am going to the gym for a dancing class, then I'm popping to the shop to buy some fruit, berries and nice munchies for a date night in with my lovely fiancé. I've been so caught up in working and studying, I really feel like we need to spend some "us" time and just take care of each other. I hope you all are looking forward to a nice Friday evening and weekend too!
 
Var på dåligt humör i morse, men har vänt runt tankarna lite och känner mig ganska glad. Ska på dans senare och sedan blir det myskväll med killen. När man har så mycket att göra är det viktigt att stanna upp ibland och ägna tid åt varandra. Hoppas ni också ser fram emot en trevlig kväll och helg!

Dinner tonight: Poached cod in a mustard cream sauce with bulgur and boiled vegetables. I'm sooo tired now, been a long day at work, been both working and doing studying, then Body Pump (which was great fun though!). Still feel like I should work more on the paper, but I think I'll just get up early tomorrow and do some work. I need to relax now.
 
Åt kokt torsk med senapssås, bulgur och kokta grönsaker till middag ikväll. Är såå trött. Känner så många "borden" och måsten, men ska nog bara ta det lugnt resten av kvällen.

The days are so dark now. It feels like I constantly want to sleep, but I can't because I need to work. I'm hoping that our dissertation will be "finished" soon, as in at least the majority of it. I hope we don't get any set backs in forms of "you haven't thought this through" or "this entire chapter needs to be rewritten". That's my biggest fear and worry at the moment. Although I try to be positive, there is nothing to be afraid of really, if it happens it happens. Then it's just to get back up on our feet and keep working.You haven't failed until you quit trying.
 
Mörka dagar och mycket oro kring uppsatsen. Borde egentligen inte oroa mig för vad som än händer är det bara att resa sig och fortsätta kämpa. Man har inte misslyckats förrän man slutar försöka.

Bolognese with macaroni and zucchini "pasta"

Busy days at the moment.  I don't even have time for exercising *cry*. Was away all day for some information on the new application system for all kids moving from compulsory school to college. Came home, cooked this dinner and then did some work on the dissertation for a couple of hours. Now I'm browsing Tumblr.com and dreaming about peanutbutter. Duh
 
Anyway, made a nice filling dinner tonight. Bolognese sauce with macaroni, zucchini and lettuce.
 
For the sauce I used:
  • minced meat
  • chopped tomatoes
  • tomato puree
  • white onion
  • carrot
  • garlic
  • balsamic vinegar
  • sweetcorn
  • stock
  • salt, pepper, basil, oregano
Fry the meat, onion and carrots in some olive oil. Add tomatoes, tomato puree, seasoning and a dash of vinegar. Also add some water. Put the lid on and let it take care of itself for about 20-30 minutes, add water when/if needed. Meanwhile you can prepare the pasta. I also used zucchini as a replacement for most of the pasta. Just take a cheese slicer and slice the zucchini into think slices. Then take the knife and cut the slices into "spaghetti". A different and fun way to use vegetables in food :-) Serve with lettuce.
 
Mycket att göra nu. Massor av jobb, plugg och äter för mycket för tillfället, duh. Gjorde iaf en god middag på köttfärssås med zucchinipasta och makaroner. Skiva zucchinin med en osthyvel och skär sedan skivorna längs med så att de blir som spaghetti. Lite kul och annorlunda sätt att äta grönsaken på :-)

Been shopping aaaall day in Ullared, a big budget shop where you can find just about ANYTHING. Bought a few Christmas presents, some candles, personal hygiene stuff, food and decorations. Feel pretty happy about the day. The rest of the evening is going to be spent with my darling on the sofa with some sushi and a little bit of chocolate watching Lost. Starting the fifth season today!
 
 Varit i Ullared hela dagen och är nöjd med mina inköp! Nu blir det soffan med älskling, sushi och Lost!

Whole grain pasta, vegetables and ham

Whole grain fusillini with woked vegetables and ham. Lovely and filling dinner.
Had a nice efficient day studying, so tomorrow I'm treating myself to go with mum to go shopping tomorrow. Hopefully I'll find a few Christmas presents and Christmad decorations!
 
Åt en god middag på fullkornspasta med wokade grönsaker och kassler. Mumsigt! Var flitig med plugget idag så åker till Ullared imorgon och shoppar! :-)

Today I have: gone up early, driven to Laholm, gone food shopping with mum, cooked lunch, studied, gone to the gym, cooked dinner, studied and now I finally take some time for my beloved blogs. I hope you all had a nice end of the week, just like me. I had a really nice time at Maria's birthday party yesterday and a nice day getting stuff done and exercising today!

I really can’t wait to finish work today, go and do some Zumba with like a 100 people at the membership day at the gym. It’s going to be awesome! Only 1,5 hour to go! So excited!

  • 7th Dec - hand in of dissertation, it will be such a relief. This date I'm also going to see Muse in Malmö with some friends! IIIIHHH!! •

I am soooo looking forward to Christmas right now though! My dissertation will be over, and I will just be able to relax a little. I hope. Can't wait to finish my studies now to be honest.
 
 

Body Pump and stew

After work I went to the gym for a class of Body Pump. Phew! Wasn't feeling too great, but during the class I just felt my energy rise and I don't know if it's my imagination, but it actually felt like I've gotten stronger already! Maybe I just had more energy today ;-)
 
Came home to a nice meal prepared by Chris: Beef and stout stew with a salad. It was supposed to be a pie, but Chris got angry with the pastry, hehe...A good refill of protein after an hour of weight lifting :-)

Dinner a few nights ago

A few nights ago we had vegetable hash and fried eggs for dinner. Just dice up some vegetables of your preference, fry with some salt and pepper in oil and serve with fried eggs. I like adding a little meat to it too, for example some leftover sausage or meatballs. It's really nice. This time we had onion, zucchini, sweet potato, peppers and aubergine, and a little ham.
 
Relaxing at the moment, reading blogs and dreaming about my breakfast tomorrow, hmmm...what should I have? :-D

Alright, not very good at updating today and yesterday. I've taken lots of photos of my food the last couple of days, but I just haven't found the time to update. I'm sort of panicking about the dissertation at the moment. The realisation that it's less than a month until official hand-in has given me alot of stress. We haven't finished our interviews yet and need to transcribe, decode and analyse the material, then write results, analysis and discussion before we can even start thinking of maaaybe getting close to the finish line. Literary background still needs a lot of work, and I'm mentally trying to not break down.
 
So, now you know why I'm a bit absent, and I will probably not update as much the next couple of weeks.

Chicken for dinner

Vert tasty dinner tonight (even though I put a tad too much salt in it, oops!)!
 
Chicken in tomato sauce with white beans for two:
  • 2 chicken breasts
  • ½ white onion
  • 3 cloves of garlic
  • 1 chicken stock cube
  • 1 can chopped tomatoes
  • 1 can large white beans
  • 1 bay leaf
  • 1 tsp lemon juice
  • some chopped parsley

Dice the chicken and fry in some olive oil, until they have some colour. Take them off the pan and put in chopped onion and garlic. Fry until soft and add chopped tomatoes, seasoning and chicken. Let it simmer under the lid for about 20-25 minutes. Add the beans and let it simmer for another 5 minutes. Taste it off with salt and pepper. Serve with some salad. 1 portion is about 375 calories.

Had a very colourful and vitamin rich breakfast this morning, preparing for a day of studies and later some workout. My study partnes arrives later this morning, so I'm tempted to go out for a little walk, to get some fresh air.

Apple meatballs

One of my favourite dishes to make with minced meat is meatballs (biffar in swedish). There are so many various ways to make them, but my speciality is the apple version. And let me tell you: my boyrfirend LOVES them (and so do I ;-))
I actually don't know exactly how much minced meat I used this time, but it made 6 meatballs. Two are big enough for one portion, but we love them so much so we split a third one too ;)
 
Meatballs for three:
  • approximately 400 grams minced meat (I used 50/50 pork and beef)
  • 1 white onion
  • 1 apple
  • 1 egg
  • 1 tspn cooking cream
  • salt and pepper

Chop the onion finely and grate the apple. Mix all ingerdients with the minced meat. Shape into balls twice the size of a golf ball and fry until cooked all the way through, approximately 6-7 minutes on each side at medium heat.

I served it with roasted sweet potato, boiled broccoli and green beans, mixed lettuce and some creme fraiche and lingonberry sauce. Cranberry sauce would work just as nicely.

Workout summary

Just got home from the gym and shops. I don't think I can express how happy I am about joining this gym, it's unbelievable. I could go there every night easily. This week's exercise can be concluded as:
 
Monday: None
Tuesday: None
Wednesday: Core 30 mins + bike ride 50 mins
Thursday: Body Pump 55 mins + bike ride 50 + 35 mins
Friday: Bike ride 50 mins
Saturday: None
Sunday: Dance 55 mins + Yoga 55 mins + bike ride 35 mins
 
I'm focusing on strengthening classes in the gym at the moment, because I already ride the bike almost everywhere I go, I get cardio exercise that way. Sunday yoga for some flexibility and relaxation (it wasn't hard yoga at all) and dancing for the fun of it!
 
Now: back to cooking dinner!
 

Chunky vegetable curry

For lunch I made this chunk, vegetarian curry and served it with green leaves and crackers and cheese.
 
For approximately 2-4 people (depending on if you choose to serve it by itself or with a side):
  • ½ butternut squash
  • 1 big carrot
  • 1 tin of chickpeas
  • 1 white onion
  • 1 apple
  • yellow curry, cumin, salt, pepper, vegetable stock
  • 1 chilipepper (optional)
  • 7 dl water

Chop all the vegetables into dices and put in a pan with some olive/rapeseed/sunfloweroil. Add the seasoning and water and let it simmer under a lid for approximately 20 minutes. Taste to see if something needs to be added, and serve with whatever you like. It goes well in a wrap, with rice (preferably brown rice) or just on it's own as we had it today. Added some crackers and cheese for two reasons: to bring in a little protein (in the cheese) and to have something to break the heat! I added a chilipepper to the curry and it was HOT! ;-) Good new kick for the metabolism, I tell ya!

Studying

Sitting in the kitchen at the moment doing some studying, basically trying to be efficient! Doing ok, I hope. Going to cook some lunch soon, something low in calories but high in nutrtion, since we spent all of yesterday binging at dad's ;-P
 
 

Friday dinner

Pesto salmon with boiled vegetables and bulgur.
 
Simply put portion sized pieces of salmon in an oven safe tray, spread some pesto on top and bake in oven at 200 degrees C until done. Boil bulgur after intructions on package. I made the sauce from mixing 2 tablespoons mayo with 2 tablespoons turkish yoghurt, 1 teaspoon of pesto and a few drops of lemon juice. Really nice and tasty dinner for a Friday night :-)
 
Now I'm going to stay on the sofa for the rest of the evening playing Assassin's Creed! Wishing you all a nice Friday evening!

Being introvert

I think I'm seriously obsessed with breakfasts. I absolutely love breakfast! I could probably eat just breakfast food for every meal of the day and be perfectly happy, haha!
 
I am at work at the moment thinking about things in my life that I wish perhaps would be better, easier or different. Thinking about myself and my relationship with other people and I think I've come to realise I'm a very introvert person.
 
Not in the sense that I shy away from meeting new people, or hide myself in a corner, but I am very careful of other people's time. I never want to disturb or in other ways interrupt someone in what they're doing. I never say anything unless I actually have anything to say (especially with new people), and if I do try small talk it always turns out awkward, I'm just not good at it.
 
I like company, but I like my company to respect my integrity and pride. If someone demands my attention or demands me to make decisions I will often react with annoyance or shyness. I like letting others make decisions and I like to spend my attention on whatever I want. If I want to give you attention, I will.
 
I think the fact that I am like this has made me lose some friends over the course of time. I don't think people always understand how introverts work. We are not being rude, we just like being quiet and listen to/watch other people in action. We like to mind our own business and only steal someone elses attention when absolutely necessary.
 
Unfortunately, our society only asks for extrovert people. People who are loud, visible and talkative. There's nothing wrong with being extrovert, it's great. But being introvert is also great. We are all different, and being quiet and careful does not mean you don't have opinions or character. It just means you are introvert. That's all.

Friday breakfast

Today I don't start work until 10.30, so I have plenty of time to eat my breakfast and get ready ;-) Made an experiment breakfast inspired by this. I didn't use all the ingredients that she used, but it turned out quite nice anyway! I used:
  • 1 dl oats
  • 1 dl fat free plain yoghurt
  • 1 tsp instant coffee
  • 1 tsp cocoa
  • 1 tsp honey

Mix it all together. I could use a little less coffee next time as it made it a little bitter, but it was nice! I topped it with a little more yoghurt, half a tbsp peanut butter, half a banana, and some frozen berries. Yum!

I didn't start this day in the best of ways through oversleeping and having to get ready for work in about 20 minutes. I normally want at least 50 minutes to get ready, so 30 minutes shorter really makes a difference! I got to work on time though, and had a good day there, talking to about 8 kids about their plans for their futures. Some are very certain, and some are very uncertain, I don't envy them! It's a tough decision!
 
After work I cycled to the shop to pick a few things we missed yesterday, rushed home, helped Chris prepare dinner and then rushed off to the gym for some BodyPump. A full body strength workout and all I can say is that my arms and shoulders are definately shaking now!
 
For dinner we made cured ham with mushrooms and zucchini in a creamy sauce. It was nice, but next time I wont forget to season it ;-) And I will also fry the onion first to bring out some flavour.
 
Cured ham in a creamy sauce 4 portions:
  • 600 gram cured ham
  • ½ large zucchini
  • 1 white onion
  • 1 dl white wine
  • 3 dl chopped mushrooms
  • 2 dl cooking cream
  • 2 dl grated cheese (try chevré!)

Chop the onion and fry it in some oil. Put it in an oven safe tray. Slice the zucchini and add. Slice the ham and put on top of the onion and zucchini. Put chopped mushrooms on top and pour a mix of wine and cream (with some salt and pepper) over everything. Top it all off with cheese, and bake in oven at 200 degrees C for 30 minutes.

Serve with some salad. Nom!

Trying to find motivation for my studies, but it's hard when you're unsure of what you have to do. I know I have to "code" the transcribed interview, but I'm not sure how. My book isn't telling me how, so I need another book. Library after work tomorrow I guess. Going to have to put in a lot more effort into my studies these next coming days.

Back home in Sweden! The flight went smooth, and everything yadayada...As the swedish saying goes "borta bra, men hemma bäst" (Nice away, but best at home). It will be nice to sleep in our own bed tonight! Also looking forward to food shopping tomorrow, and going exercising! I haven't been too bad with eating this weekend, nutrition wise. Only a couple of treats, and a few glasses of wine. All allowed, but it will be nice to be back in routine ;-)
 
Food plan until Sunday:
Wednesday: Lunch - vegetable soup. Dinner - Cured ham and mushrooms
Thursday: Lunch - leftover from dinner. Dinner - Ham and vegetable hash
Friday: Lunch - leftover from dinner. Dinner - Chicken breast with white beans
Saturday: Lunch - Pork chops with rootveg mash. Dinner - Chickpea and butternut squash curry
Sunday: Lunch - Salmon with cold sauce and quinoa. Dinner - Meatballs and sweet potato wedges.
 
Exercise plan until Sunday:
Wednesday: Bike ride, Core class
Thursday: Bike ride, Body Pump class
Friday: Bike ride.
Saturday: Bike ride
Sunday: Bike ride, Yoga class.

November goals

New month and new opportunities to take on new challenges and goals. My goals for November will be to:
 
  • Sign up and go to 3 classes at the gym a week, or 2 classes and 1 gym workout.
  • To eat and treat myself at the birthday parties coming up, but not binge. Stop eating when I'm full and listen to my body.
  • To keep eating healthy, and try at least 2 new ingredients each week. Eating various food is good for you, both physically and mentally.
  • To not procrastinate uni work and do what needs to be done in time. Work on the dissertation 5 days a week.

Just got home from a 10k bike ride, which was really heavy since we had strong head wind most of the time. Living on the coast has its downsides....we always have head wind! ;-)
 
Made an avocado, egg and parmaham sandwich for lunch. Really yummy!
 
Now thinking of what to pack for tomorrow, since we are going to be travelling all day. Want to stay full and satisfied and still keep the nutrition balanced. Ah well, I'll think of something ;-)
